From lesser varieties, date brandy is also obtained. Fruits of the variety “Caryota” have a particularly high starch and protein content and thus also a caloric value. They are compressed as date bread and form the daily food. This gave the date the name “bread of the desert”.

Date cores can be used as feed or as a substitute for coffee. If you press the date cores, you can win date oil from the upper stem – mostly older palms – a special specialty is obtained. Lagmi, a gray-green, sweet juice that needs to be consumed fresh.
